Of all of my travels to hotels and wine estates, I still favour Lanzerac as my ultimate favourite. Here, luxury seems effortless by the hosts, and perfection is far surpassed in all regards. As we move into winter, the chefs in the Manor Kitchen at Lanzerac are ready to serve dishes to satisfy the palette tenfold.
I was honoured to be a guest at the Lanzerac Hotel & Spa exclusive Chef’s Wine Table, presented by Executive Chef, Stephen Fraser and Cellar Master, Wynand Lategan. A beautifully decorated table awaited media guests, decorated with fresh ingredients reflective in the plates to come, as well as plants, which gave a fresh feel, heightened by the beautiful light streaming through the windows. Chef Fraser discussed the new winter menu with us, featuring the very best locally and sustainably sourced seasonal ingredients.
The kitchen is visible to guests through a large window pane, allowing you to see first-hand how the elegant and imaginative dishes are crafted by Lanzerac’s team of talented chefs. A feast of culinary masterpieces followed, including a salad of exotic mushrooms to start, served with red quinoa, mushroom pesto, goat cheese, soya and orange; an intermediate course comprised of venison tartare with kale puree, bone marrow, activated charcoal mayo, radish salad and rye; mains will consist of cutlets of Boland lamb, cauliflower risotto, beetroot, green olive pesto and rosemary jus, accompanied by a mélange of seasonal sides; and the dessert will be composed of citrus meringue, orange curd, pistachio mousse, candied citrus and macaroon.
Each course was accompanied by fine wines from the Heritage range that have been carefully selected by the Cellar Master to perfectly complement the menu. He will be advising on why each wine was chosen and which notes harmonise with the ingredients in the different dishes.
